Penelope Project X returns in 2025 with one of its most compelling releases yet — a bold, single-barrel straight bourbon finished in rich Oloroso sherry casks from Jerez, Spain.
Crafted from Penelope’s signature four-grain mash bill (corn, wheat, rye, and malted barley), this experimental release is aged over four years in new American oak before spending a final maturation in 250-liter Oloroso barrels. The result is a beautifully layered whiskey that combines classic bourbon warmth with deep, dried fruit complexity.
Bottled at 108 proof and non-chill filtered, this limited release explodes with notes of raspberry, brown sugar, black cherry, and spiced stone fruit — followed by a long, warming finish touched with leather, tobacco, and white pepper.
Only 130 bottles exist of this single-barrel release. Once it’s gone, it’s gone.
