Hillrock Solera Aged Bourbon
Hillrock Solera Aged Bourbon is one of the few American whiskeys produced using the traditional solera aging method, a process more commonly associated with fine sherry. Rather than batching, whiskey is drawn from a large solera cask and replenished with younger spirit, creating a continuously evolving blend of ages and character. Crafted from estate grown grain and bottled at 92.6 proof, it offers a layered and distinctive take on American bourbon.
The nose opens with caramel, dried fruit, and warm vanilla layered over toasted oak. On the palate, rich toffee, baking spice, orchard fruit, and a gentle nuttiness unfold with a smooth, rounded texture. The solera process adds depth without heaviness, allowing the flavors to build gradually. The finish is long and balanced, carrying soft oak, spice, and a lingering sweetness that feels polished and cohesive.
For a pairing that complements its layered sweetness, pour Hillrock alongside our Burrata & Toast. The bourbon’s caramel and fruit notes play beautifully with the roasted cauliflower and sweet potato curry spread, while its oak and spice bring structure to the creamy burrata and chickpeas. It’s a pairing that feels warm, textured, and quietly indulgent.
