Havana is part of Penelope Bourbon’s Cooper Series, where their signature four grain straight bourbon is finished in rum barrels to explore how different cask influences reshape the spirit. In this case, the bourbon rests in barrels that previously held Cuban style rum, adding warmth, sweetness, and tropical depth while keeping the bourbon’s core structure intact. Bottled at 95 proof and aged four years or more, Havana balances approachability with layered character.

The nose opens with caramel, vanilla, and brown sugar alongside hints of ripe banana and soft tropical fruit. On the palate, rum driven sweetness weaves through notes of toffee, baking spice, honeyed grain, and subtle oak. The finish is smooth and lingering, carrying gentle spice and a rounded molasses like richness that sets it apart from traditional bourbon finishes.
